Sweets or savoury breakfast?

My mum never made us sweets for breakfast, and this may be the reason I’m not keen on having sweet pancakes or waffles early in the morning.

I’m a savoury breakfast person all the way! However, after watching the movie Marie Antoinette, I may have changed my mind a little. Watching them scoff down endless amounts of gorgeous French pastries for breakfast every morning doesn’t seem like a bad idea after all.

My husband and dad also prefer savouries for breakfast. So, for the last post for this year’s Father’s Day, it’s a breakfast recipe because having homemade breakfast served in bed is simply luxurious! 

Savoury Waffles

As much as I absolutely love the idea of having breakfast in bed, I don’t think anyone has done this for me, except for hotels. Wait, that’s actually a lie, my husband has. Before our toddler was born, hubby made me burnt red velvet pancakes for breakfast in bed on my birthday. Even though they weren’t perfect, I ate them all because it was a sweet gesture and they honestly didn’t taste bad!

These savoury waffles are super easy to whip up. I used 3 types of cheese because I just can’t help myself, but you could just use one type of cheese if you like.

The beauty of cheese waffles is you could serve them with so many things, just like bread, but tastier! Eggs, bacon, mushrooms, tomatoes, wilted baby spinach, sausages, and the list goes on. Here, I served them with smoked salmon and poached eggs.

Can you substitute milk for buttermilk in waffles?

Buttermilk gives these savoury waffles a subtle tangy flavour and makes them tastier. However, if. If you don’t have buttermilk on hand, you can just substitute buttermilk with regular full-cream/whole milk. The milk actually gives the waffle a crisper texture, so it’s still delicious.

How to make buttermilk substitute – If you don’t have any buttermilk but you would like to include it in a recipe, try this simple substitute. For a cup of buttermilk, combine a cup of full cream milk and 1 tablespoon of vinegar or lemon juice. Let the mixture sit at room temperature for 10 to 15 minutes before use. You should see the milk slightly curdle and thicken.

What do you eat with savoury waffles?

Savoury Waffles

The best thing about having these cheese waffles is you could serve them with anything you like. Just like you would for bread on a savoury breakfast plate. Grilled/pan-fried mushrooms, tomatoes, eggs, sausages, bacon or wilted spinach are great choices.

My favourite way to serve them is with a pair of poached/fried eggs with smoked salmon and a dollop of cream cheese. Oh, and a large mug of coffee, of course. Having this served to me in a warm bed is what pure bliss would look like!

Ingredients for Savoury Waffles with Cheese and Chives

Plain flour (all-purpose flour) doesn’t have any leavening or raising agents (such as baking powder) mixed into the flour.

Buttermilk adds a nice savoury and tangy flavour to the waffles. If buttermilk isn’t available, swap it with milk. The waffles will still be delicious and crispy.

Cheeses – I used a mix of tasty cheddar, mozzarella and parmesan cheese. However, you don’t have to use 3 types of cheeses, just two or one will do. Select a strong-tasting cheese that melts easily when heated, such as Swiss, Gruyere, or any kind of cheddar cheese.

How to make Savoury Waffles with Cheese and Chives

Step-by-step guide with photos

Preheat the waffle maker to 200°C (390°F).

For the dry ingredients – Sift the flour, sugar, baking powder and salt into a large bowl.

For the wet ingredients – In a separate bowl, pour in the buttermilk and melted butter, then add the egg. Whisk until smooth.

Make a well in the dry ingredients, then pour in the wet ingredients. Fold the ingredients together just until combined (don’t over-mix). The mixture will be a little lumpy, but this is okay. Add the cheeses and chives into the batter and fold a few times to combine.

Once the waffle maker comes to temperature, brush a generous amount of melted butter all over the plates of the waffle maker (top and bottom). Place 1/3 cup of batter for each waffle and cook for 7 to 8 minutes or until the waffles are nice and golden.

Serving suggestions – These cheesy waffles are best served immediately. Serve them just like you would with slices of bread. Grilled/pan-fried mushrooms, tomatoes, eggs, sausage, bacon or wilted spinach are great choices to serve with these savoury waffles.

Leftovers – Allow the waffles to cool completely at room temperature, then transfer them into an airtight container and store them in the fridge for up to 3 days. If frozen, they’ll keep for 2-3 months. Reheat the waffles in a toaster or under a grill/broil.

  • 1 cup plain flour (all-purpose flour) (NOTE 1)

  • ½ tsp salt
  • 2 tsp baking powder
  • ¾ cup buttermilk (at room temperature) (NOTE 2)

  • cup shredded tasty cheese (NOTE 3)
  • cup shredded mozzarella cheese (NOTE 3)

Instructions
