Hassle free waffles

These delicious waffles are fuss-free! You don’t need yeast, buttermilk or any special equipment to whip up the batter! We all love fluffy waffles, but please don’t ask me to separate the eggs and whip up the egg whites. Oh, I just remembered that I do this when I make my RED VELVET WAFFLES, but those are ‘special occasion’ waffles.

These Easy Waffles are for lazy cooks that want great tasting waffles with little effort involved. The hardest part of making these waffles is warming up the milk and melting the butter. Our handy microwave is on standby for that job! The rest is all about throwing all the ingredients into bowls and mixing it up. It’s so simple that you probably can make these waffles in your sleep as I do. I’m not actually awake until I sip on my morning coffee.

For such as a simple batter with modest ingredients, these waffles don’t disappoint!. It’s perfectly golden and crispy on the outside and fluffy on the inside. I know this doesn’t sound original, but my poor brain can’t think of anything else right now! So you’re getting the default waffle description, but at least I can assure you it’s all true.

These waffles are perfect for desserts or savouries. You can load them up with ice cream and syrup or have them with bacon and sausages. I frequently make these waffles and serve them both ways, but if I’m doing savouries, I lessen the sugar by half.

Last year for my husband, Tomasi’s birthday, I made him Nashville fried chicken with bacon, waffles and watermelon. Sounds like a strange combination, huh? That may be so, but it was crazy delicious!

Joyful Sunny Brekkie!

Weekends are bliss! especially when I was working full time. Every Friday I would stare at the clock displayed on the corner of my screen. As soon as it was home time, I would furiously pack my bag and sprinted out the door. I’m a total workhorse when on the job, so when the weekend arrives, it’s my time to relax, binge eat and spend time with the people I love.

Fast forward to the present. I’m no longer working but a full-time mum to my 21-month-old Kai. All members of our household are home 24/7 because of lockdown restrictions. Not in a million years would I’ve been able to predict that this was my future! I often say that if I woke up from a 2-year coma and was told that I was a mum and that there was a worldwide pandemic happening, I would think that person was pulling my leg.

But yet here I am, in this strange mix of joyfulness and sadness. Sad for the lives that ruin because of COVID but, I also feel blissful and very blessed every time I look at my little boy.

No longer working in the office and having everyone home, I get my days mixed up. I rarely know what day of the week it is anymore and weekends are less exciting because of lockdown. In order to make weekends exciting again, I’ve started ‘Joyful Sunny Brekkie’. This is when we throw our diet out of the window and feast like royalty every Sunday morning!

On our first Joyful Sunny Brekkie, I made us these hassle-free waffles. I served it with homemade STRAWBERRY COMPOTE, ice cream, bacon, and sausages. Ahh, every day should be Sunday!

We don’t need a waffle maker!

A few years back, Tomasi and I were shopping at a warehouse selling home goods. I always trick him and say I only need a couple of items but will end up checking out with loads of stuff.

I spotted this nifty waffle maker. It had grill plates that popped out, a 3-in-1 appliance that could grill, toast sandwiches, and make waffles. Genius right? Yes, I know, and I had to get it.

“Don’t buy it!” No, that wasn’t the voice from inside my head. It came from Tomasi. “You have nowhere to put that, you’ve already got too many appliances.”

“I’ll make space for it.” I said casually, bending over to pick up the box.

“Yeah, and that space will be in the garage, it’s going to get covered in dust. You’re going to use it once and never use it again. Besides, I’ve never seen you make waffles!”

“That’s because we don’t have a waffle maker!”

A staff walked by and heard us bickering and asked if she could assist us by taking the box to the register.

“Sorry, we don’t need a waffle maker.” Tomasi said, looking sheepish because we got caught out. He took the box off me and placed it back into the slot.

I don’t remember what happened next, but Tomasi ended up carrying the box to the counter. I must have bribed him somehow by promising to make him waffles for a few weeks. If that was the case, I definitely broke that promise. That waffle maker lived in our cupboard until our sandwich press died. But now that it’s finally out of the box, I’ve been making all kinds of waffles. It’s a happy ending after all!

It’s not ideal to use chilled eggs and milk as it’ll cause the melted butter to go clumpy and make it difficult to combine with the remaining ingredients.

Plain flour (all-purpose flour) does not contain any leavening agents.

Eggs – Take the eggs out of the fridge and leave them at room temperature for at least 30 minutes prior to making the waffles.

Milk – The milk should be warm, between 36°C to 40°C (97°F to 104°F) is ideal. I zapped my milk in a microwave-safe jug for 20 seconds intervals and stirred it each time until it was lukewarm.

How to make Easy Waffles

In a large bowl, place in the flour, sugar and sift in the baking powder and salt, whisk to combine. In a separate bowl, place in the milk, butter, eggs and vanilla, whisk to combine. Pour the wet ingredients into the dry ingredients and fold the batter until just combined, it’s okay if the batter is a little clumpy.

Preheat the waffle maker to 200°C (390°F). Once it comes to temperature, brush the grill plates with melted butter to prevent the waffles from sticking. Pour 1/3 cup of batter for each waffle and cook for 6 to 7 minutes or until golden and cooked through. Repeat the same steps with the remaining batter.

Leftovers – Allow the waffles to cool completely at room temperature. Transfer the waffles into an airtight container and refrigerate, it’ll be good for up to 5 days. Frozen waffles will keep for up to 3 months.
