Instructions
Preheat the waffle maker to 200°C (390°F). For the dry ingredients - Sift the flour, sugar, baking powder and salt into a large bowl. For the wet ingredients - In a separate bowl, pour in the buttermilk and melted butter, then add the egg. Whisk until smooth.
Make a well in the dry ingredients, then pour in the wet ingredients. Fold the ingredients together just until combined (don't over-mix). The mixture will be a little lumpy, but this is okay. Add the cheeses and chives into the batter and fold a few times to combine.
Once the waffle maker comes to temperature, brush a generous amount of melted butter all over the plates of the waffle maker (top and bottom). Place 1/3 cup of batter for each waffle and cook for 7 to 8 minutes or until the waffles are nice and golden.
Notes
(NOTE 1) Plain flour (all-purpose flour) doesn't have any leavening or raising agents (such as baking powder) mixed into the flour.(NOTE 2) Buttermilk adds a nice savoury and tangy flavour to the waffles. If buttermilk isn't available, swap it with milk. The waffles will still be delicious and crispy.(NOTE 3) Cheeses - I used a mix of tasty cheddar, mozzarella and parmesan cheese. However, you don't have to use 3 types of cheeses, just two or one will do. Select a strong-tasting cheese that melts easily when heated, such as Swiss, Gruyere, or any kind of cheddar cheese.Serving suggestions - These cheesy waffles are best served immediately. Serve them just like you would with slices of bread. Grilled/pan-fried mushrooms, tomatoes, eggs, sausage, bacon or wilted spinach are great choices to serve with these savoury waffles.Leftovers - Allow the waffles to cool completely at room temperature, then transfer them into an airtight container and store them in the fridge for up to 3 days. If frozen, they'll keep for 2-3 months.
