How ironic, here I am writing about ‘fun in the sun’ when it’s pouring down! This whole week was filled with rain pelting down. I woke up with my husband Tomasi telling me that Sydneysiders have been urged to stay at home this weekend due to heavy flooding.
My sister Nara was catching up with one of her close friends for lunch but refused to cancel when I asked her to. Tomasi and I just looked at each other and helplessly shook our heads, before he muttered ‘It’s the lives of single ladies’.
So this weekend we are housebound with a bored 16-month-old. Our son Kai is waddling and sulking around the house as he wants to go out. Unfortunately for him and us, we’ll be building giant legos and watching baby cartoons all weekend!
Luckily the night before we were able to sneak in a little adult time when Kai was asleep. Ok, I just realised that sounded really wrong, what I meant was I made refreshing Strawberry Mojitos for us to unwind!
Tomasi’s had a bad week at work, he was stressed out of his mind with deadlines to meet.
I wanted to make us easy and quick cocktails to sip on the couch to help Tomasi chill out on a late Friday night. Strawberries Mojitos popped in my head as I wanted to use my leftover strawberries and mint.
Rain, hail or shine outside I didn’t care. I could hear the gentle waves along the shores and feel the warm sun on my skin as this Strawberry Mojito took me to the Caribbean.

Twist your Mojito Cocktail your way!
When Tomasi saw me carry this cocktail to him he smiled cheekily and said:
‘You’re so thoughtful Catte, you made me YOUR favourite cocktail to help me unwind after a hellish week at work’
Tomasi was half right, Mojitos is one of my favourite cocktails. Tomasi prefers a simple spirit mix so I kindly offered to drink his Mojito for him but he sharply declined. He downed the cocktail and asked me to make him a real man’s drink, bourbon and coke! (eye roll)
Mojitos are dangerously easy to drink, it has a perfect balance of sweet, sour and freshness.
For a cocktail that looks and taste complex, it’s extremely simple to recreate at home. You only need a muddler but if you don’t have one don’t worry just use the end of a wooden spoon.
Different types of Mojito with one recipe!
Original – Simply just leave out the strawberries and follow the recipe.
Virgin (no alcohol) – Mojitos make great mocktails, one of the best! The muddled lime, strawberry, mint and sugar taste so good that you may not care that there’s no rum. For a Virgin Strawberry Mojito just skip the booze and follow the recipe.
Weak Mojito – Mojitos aren’t very strong but if you prefer a lighter cocktail simply half the amount of rum to 30ml (1oz) instead of 60ml (2oz)
With other fruits – The varieties of mouthwatering Mojitos cocktails you can make are endless, passionfruit, apple, blueberry and raspberry are just a few great ideas! Just muddle your chosen fruit with lime, mint and sugar and follow the recipe.
Ingredients for Strawberry Mojito
White rum – I used Bacardi but any brand of white rum can be used.
Caster sugar is also known as ‘superfine sugar’ or ‘baker’s sugar’. It has a finer consistency than white or granulated sugar so it’ll dissolve quicker when muddling. You can also use regular white sugar, just spend a bit more time muddling it into the lime.
Soda water is also known as sparkling water, seltzer water, club soda or carbonated water. I used my soda stream machine to make mine.
How to make Strawberry Mojito
Step by step guide with photos
Cut the lime in half and cut the halves into 4 or 5 segments. Cut the strawberries into quarters and pick the off the mint leaves, leave some mint sprigs for garnish.
Use a glass that can hold 350ml (12 fl oz), add in half of the limes wedges and half of the strawberries, mint leaves and sugar. Using a muddler or the end of a wooden spoon carefully muddle the ingredients together to extract the flavours.
Add in the rum and pour in the soda water.
Stir the mix with a spoon making sure the sugar has fully dissolved, add in the ice and the remaining strawberries and lime. Garnish with mint leaves sprigs and strawberries.

Ingredients

- 125 ml soda water (½ cup) (NOTE 3)
- Ice cubes
- Sprigs of mint to garnish
