These super tasty Patties are filled with Salmon, Cheese and Broccoli. Easy, budget-friendly & great for as a starter or a snack.

Patty me up, please!

For some unknown reason, I’m attracted to patties. Each time I walk past premade ones in the supermarket I eye them longingly. I warn myself not to fall into the trap again by throwing a packet in my trolley. Yes, they’re affordable and convenient but I hate to say it, I’ve never tasted a patty that I enjoyed from the supermarket.

At least I have a warning system in place to stop me from buying it again but my husband, Tomasi, doesn’t. We would go eat out at a place and he would order the same dish he loathed previously. I would sweetly (but through gritted teeth) remind him that he didn’t enjoy that dish last time but this made Tomasi cranky and he would grudgingly order something else. So I stopped reminding him, which meant I had to painfully watch him order the very same dishes and then he tells me ‘I shouldn’t have ordered this as it’s not that great!’. Does it mean I’m evil if I envisioned myself leaping over the table and strangling him?

Anyway, back to patties!

There really isn’t a reason why I should buy store-made patties when they are simple to make at home. They’re also tastier and I know exactly what’s in it.

These Salmon Patties with Cheese and Broccoli are budget-friendly and convenient as it uses canned salmon. Trust me, you’ll be pleasantly surprised how good these patties taste and before you know it, you’ll reach over for another one! These patties are crispy on the outside, soft and cheesy on the inside with a generous amount of salmon and broccoli.

For parents of little ones, you’ll be happy to know that Kai, my 18-month-old toddler, has approved these patties.

So many ways to eat these patties

You can eat these patties whilst doing your daily squatting exercise or eat them laying on the couch with a stack of them balanced on your stomach.

I’m the latter, actually, I wish that was true. There’s no laying around with a little monster around. Lately, Kai thinks he can sprint even though he hasn’t perfected his walk yet. I’ve been spotting him doing his ‘awkward ballerina’ walk, this is where he tries to walk on his tippy toes. Who knows what goes on in that little guy’s head.

It’s true that these patties can be eaten conveniently but what I meant was there are many ways to serve them.

Tomasi loves making burgers or sandwiches with the patties, he just adds lettuce and sauce. My ‘always trying to be healthy (but often fails)’ sister, Nara, eats them with a salad. Kai and I keep it simple as we munch on the patties as they are but I love dipping mine with sauce. I usually have it with JAPANESE TARTAR SAUCE or the lovely and delicious WASABI PICKLE MAYO sauce

The Ikea story

Tomasi and I recently visited our local Ikea. We were checking out one of their little showrooms when he called me over. In that split second, we heard a loud crash close by. We turn to see Kai looking guilty and standing next to a pile of broken glass. He had pulled down one of the display lamps.

My first instinct was to check to see if Kai was okay, grab him and run, leaving my husband behind to explain. That didn’t happen because people were already staring at us! We apologised profusely and offered to pay for the damage but the people at Ikea assured us that this happens all the time, they were more concerned about Kai’s welfare.

After that incident, we sat Kai down and buckled him into a shopping trolley so he couldn’t get up to more mischief.

That same evening we had dinner at their self-service restaurant. After we finished Tomasi went to put our dirty dishes onto the kitchen conveyor belt which whisks the dishes away to be washed. That was when we heard a loud crashing sound of broken plates and glasses, it silenced the busy restaurant. With relief, I looked over at Kai, he was still secured in our trolley. Then, like everyone else, I turned to see what was happening. There in the centre of the broken plates was my husband who had clumsily dropped his tray.

Ingredients for Salmon Patties with Cheese and Broccoli

Japanese Panko bread crumbs are lighter and flakier than Western-style breadcrumbs, it absorbs less oil and is crispier in texture. Panko can be found in most supermarkets and in Asian specialty shops.

Canned salmon – You’ll need a 400- 415gm (14-15oz) tin of pink or red salmon. Before using the salmon drain the water out as much as possible and remove any big bones.

Cheeses – I used a combination of parmesan and mozzarella but you can choose your favourite cheese(s) as long as it melts nicely when heated. Parmesan, gruyère and all cheddar varieties are good choices!

Broccoli – only use the florets. Chop the broccoli roughly but finely, the finer it is, the better it’ll adhere into the patties whilst shaping and frying. I did not precook the broccoli as I wanted it to by crunchy and give the patties some nice texture.

How to make Salmon Patties with Cheese and Broccoli

Step by step guide with photos

Pulse and blend the panko, onion and garlic in a food processor until the panko breadcrumbs are moist.

Chop the broccoli florets roughly but finely, the finer it is, the better it’ll adhere into the patties whilst shaping and frying.

Drain the water from the canned salmon and remove as much water as possible. You may want to also remove any large bones from inside the salmon.

In a large bowl, mix together the moist breadcrumbs, broccoli, eggs, parmesan, mozzarella, dill, salt and pepper. Once combined, add in the salmon and mix well, breaking the salmon up as you go.

Frying the Salmon Patties

Heat up a non-stick frying pan on medium heat, pour enough oil to cover the base of the pan. Using a measuring cup scoop up 1/3 of the mixture and mould it into a ball then flatten it to approximately 1.5cm in thickness. Once flatten the edges may crack so use fingers to tuck it neatly back in.

Once the oil has heated up, carefully place the patties in using a large flat spatula. Fry 4 or 5 patties at a time but don’t overcrowd the pan. Cook for 3 minutes on each side or until cooked and golden in colour. Place the cooked patties on a cooling rack for 5 minutes, the patties will firm up and won’t fall apart as easy.

Leftovers – allow to cool off completed and place into a sealed container and place it in the fridge, will keep up to 3 to 4 day and can be frozen for up to 2 months These patties reheat up nicely in the air fryer!

  • Vegetable oil to fry (or any neutral tasting oil)
