How to choose a good salmon fillet?
Back in my struggling university days, I had to work as a fishmonger, and boy, did I despise that job 😂 However, I’m glad I can provide you with some handy tips for fish and seafood.
Look for salmon fillets are vibrant orange with firm texture. They should be moist, but not slimy. Any signs of bruising or discoloration could indicate poor quality. Additionally, aim to select fillets of similar size and thickness for even cooking.
Some useful tips when making this recipe
If you can, try to get fresh skinless and boneless salmon fillets to save time. Keeping the skin on the salmon is an fine, but the sauce will make it rubbery. Using skin-on salmon will make the skin rubbery and unpleasent to eat.
The sauce in this dish has a thin consistency, even when reduced slightly, but its flavour is still amazing.
Make the recipe in a quantity that matches the number of people you plan to serve, as reheating leftovers may cause the sauce to separate.

How to make Honey Garlic Butter Salmon
Step-by-step guide with photos
Combine the soy sauce, honey, and Dijon mustard in a small bowl and mix well. Pat the salmon dry with paper towels and season with salt and pepper.
Melt the butter in a large frying pan over medium heat until it sizzles. Fry the salmon fillets for 3 to 4 minutes per side, adjust the cooking time on how thick the fillets are. Depending on the size of your pan, you might need to do this in 2 batches.
Move the salmon to the side of the pan or onto a plate, then add the garlic and onions to the pan and saute for 1 to 2 minutes or until fragrant. Give the soy and honey mixture a quick mix, then pour into pan. Return salmon to the pan, then cook for 4 minutes whilst spooning the sauce over the salmon regularly (sauce won’t thicken). Add the lemon juice and continue cooking for another minute. Remove pan from the heat and sprinkle with parsley.
Leftovers
Serve this Honey Garlic Butter Salmon dish immediately or while still warm, as reheating can cause the sauce to separate.
