I’m back, and I apologise for my sporadic presence this year. Honestly, it’s been a challenging year. Without an ounce of exaggeration, my 4-year-old son, Kai, and I have been sick for 4 months straight this year.

Spring has arrived in all its glory, but here I am dealing with a frickin raw inflamed throat. Kai caught tonsillitis from preschool and, like always, kindly passed over to me 👍 I absolutely LOATHE having a sore throat! It’s more irritating than having a continuous leaky nose. I’m just about ready to pull my own tonsils out!

Anyway, that’s enough whinging from me because I still soldiered on and made this delicious super cinch Prawn Laksa. There’s no need for us to reach our phone and scroll through Uber Eats when we’re craving a warm, creamy bowl of flavourful laksa on a weeknight. With this cheat recipe, we can whip up an impressive bowl of laksa in under 30 minutes!

Let’s be real because nothing can top a traditional laksa that’ cooked with love for hours. However, in saying that, this version is pretty damn good! So, grab yourself a jar of good quality laksa paste and make this TONIGHT!

While optional, simmering the prawn heads and shells in stock is highly recommended for a creamy laksa broth that bursts with deep prawn flavour. Oh, it’s so so good! Also, don’t forget about those addictive chewy tofu puff will help soak up all that goodness!

Why use laksa paste?

A jar of laksa paste is affordable and fuss-free! Think of it like curry paste and use it to create wonderful meals we know and love.

I’ve used Laksa paste from Thailand and Malaysia and have enjoyed both, but they taste different. I used the Thai ‘Por Kwan’ laksa paste here, which you can find in Asian grocers. As with most store-bought curries, the quality, level of spiciness and sweetness in laksa paste can differ, so you might have to sample a few until you discover the perfect one for you.

Why cook prawn shells and heads?

Believe it or not, prawn heads and shells pack the most flavour! Cooking prawn shells and heads releases their natural oils and aromas which enhances the overall prawn flavour in dishes. So, if you have time, don’t skip this step.

Make your laksa chicken or vegetarian

Not a prawn lover? That’s okay because you can simply swap prawns for 500gm / 1.1lb of chicken thighs. Thinly slice the chicken and cook it in the broth for 2 to 3 minutes or until it’s fully cooked.

For a vegetarian laksa, you could get creative and add tempeh as a protein substitute and load the soup with fresh vegetables such as Chinese greens, capsicum / bell peppers and baby corn. Swap chicken stock for vegetable stock and chicken powder for a vegetable stock cube.

What noodles go in laksa?

Ultimately, the decision on which noodles to use in your laksa is up to you, but thin rice vermicelli is typically used. The Malaysian restaurant I get my laksa from has both rice vermicelli and Hokkien noodles, which I enjoy for the added texture contrast.

Raw prawns – To get that extra prawn flavour in the laksa broth, opt for fresh prawns with their heads and shells intact. The shells and heads have the most delicious prawn flavour, so we’ll be using them to make the broth. For an even faster meal, simply use 500gm of pre-peeled prawns. If they’re frozen, thaw them in the fridge the night before using.

Laksa paste – I’ve used Laksa paste from Thailand and Malaysia and have enjoyed both, but they taste different. I used the Thai ‘Por Kwan’ laksa paste here, which you can find in Asian grocers. Coconut milk – I used a combination of regular and light coconut milk to get that creamy balance in the laksa broth without making it too thick.

Fried tofu puffs (Tofu puffs or tofu squares) – These are prepackaged deep-fried cubes of tofu found in most Asian grocers in the chilled section. Tofu puffs have a sponge-like chewy texture that allows them to absorb flavours well, making them perfect in soups like laksa.

Fish sauce – My favourite brand is ‘Squid fish sauce’ from Thailand, but any brand of fish sauce would work. Despite its strong fish odour, fish sauce imparts a distinctive savoury taste to dishes. You should be able to pick up a bottle at the supermarket or at an Asian grocer.

Chicken powder – I cannot live without ‘Knorr Chicken Powder’ (not sponsored). It seriously enhances the taste in many of my savoury dishes. Although I highly recommend this brand, other chicken powder, chicken stock powder, or crumbled chicken bouillon cubes would also work.

How to make Easy Laksa Recipe with Prawns

Step-by-step guide with photos

Optional, but highly recommended for delicious intense prawn broth. Peel and devein the prawns by removing the central vein or intestinal tract. Put the cleaned prawn meat in one bowl and use another for the head and shells.

Heat a tablespoon of oil in a large saucepan over medium-high heat, then add the prawn heads and shells (not the prawn meat). Stir the shells regularly until they become bright orange, then pour in the chicken stock. Bring the stock to a boil, then lower the heat to medium-low and let it simmer for 10 minutes. Stain the broth, then discard the solids. You now have a chicken and prawn broth.

Heat a tablespoon of oil over medium heat in a large saucepan (can use the same one, just give it a wipe over). Add in the laksa paste for 1-2 minutes and stir it quickly. Pour the chicken and prawn stock and bring to a boil. Reduce heat to medium-low, then stir in the coconut milks and bring to a simmer.

Add the tofu, prawn meat, sugar, chicken powder, fish sauce and cook until the prawns are orange (1 to 2 minutes). Remove saucepan from heat, then stir in the lime juice. Have a taste and adjust broth to your liking by adding more fish sauce, sugar or lime juice to balance the laksa.

Assemble the noodles in a bowl, then add some prawns, tofu and laksa broth. Optional – serve with fresh chillies or chilli sauce and bean sprouts.

How to store Laksa

Leftovers – Allow the laksa to cool completely at room temperature, then transfer into a sealed container (without the noodles) and store in the fridge for up to 3 days.
