Instructions
In a glass, pour in pineapple juice and place in the lime and raspberry. Use a muddler or the back of a wooden spoon and muddle the ingredients together. Take your time to remove as much juice as possible from the fruits for flavour. Strain the mixture into a cocktail shaker, then use the back of the spoon to press the liquid out gently. Discard the solids or use the leftover raspberry in a fruit smoothie.
Pour in the Hennessy, Cointreau and egg white (if using) into the shaker and shake vigorously for 20 seconds. Place the ice cubes into the shaker and shake for another 30 seconds, then quickly pour the cocktail into a chilled glass. The foam layer should settle on top.
Notes
(NOTE 1) Hennessy VS is a very popular brand of French Cognac (Cognac is a variety of brandy for a region in France). Hennessy has a sweet, spicy and woody flavour. You could swap Hennessy with whisky, brandy or a different brand of Cognac for this cocktail.(NOTE 2) Cointreau is a French orange-flavoured liqueur. Triple Sec or any brand of orange-flavoured liqueur would work in this cocktail.(NOTE 3) Egg whites (optional - not pictured above) - Egg whites are purely for the wow factor. It's the secret and tasteless ingredient used by bartenders to make a foamy layer in cocktails.
