Ingredients
  

  • 85gm / 3oz strawberry jelly or jello crystals (or any flavour of choice) (NOTE 1)
  • 1 cup (250ml / 8.5floz) boiled water
  • 1¼ cup (310ml / 10.5floz) thickened or heavy cream (NOTE 2)

Instructions
 

  • Mix jelly crystals with boiled water, then fridge until thick, syrup-like consistency. Depending on the level of coldness in your fridge, this could take anywhere from 30 to 45 minutes.

  • Add the cream and cooled jelly to a large bowl. Using a hand mixer or stand mixer, whip on high speed for about 5 minutes, or until the mixture thickens and doubles in volume. Spoon the mixture into 4 glasses, then fridge for 2 hours, or until fully set.

Notes

(NOTE 1) Flavoured jelly or jello crystals: I used strawberry sugar-reduced jelly crystals, and they worked beautifully. This makes it a great option for young children or anyone mindful of their sugar intake. That said, you can also use regular sugar jelly crystals. You could also swap the flavours to your liking, like raspberry, pineapple, lemon, or mango.
(NOTE 2) Thickened cream (whipping cream or heavy cream): In Australia, thickened cream contains added thickening agents such as gelatine or vegetable gum and usually has around 35% milk fat. Despite this, whipping cream or heavy cream can be used as a suitable substitute.
Make ahead and storage: Once prepared and poured into serving glasses, cover it with cling film or plastic wrap. They will keep for 2 days but are best served on day 1 for a light and fluffy texture.
Freezing: Flummery is not suitable for freezing, as it can separate and lose its airy texture.
