Notes

(NOTE 1) Amaretto - Amaretto is an Italian sweet liqueur with a cherry and almond flavour. I used Galliano's amaretto, but any brand of amaretto would work.
(NOTE 2) Simple Syrup is just a cooled mixture of 1:1 sugar and water. It adds sweetness to drinks and keeps cakes moist. How to make simple syrup - Combine 1 cup of water and 1 cup of white sugar in a saucepan. Give it a stir and place the saucepan over medium-high heat. Stir until the sugar has dissolved and bring the mixture to a boil. Reduce the heat to low, then simmer the mixture for 5 minutes. Remove from heat and allow the mixture to cool completely. Transfer the syrup into a sterilised jar and store it in the fridge. It should be good for up to a month.
(NOTE 3) Egg whites give cocktails a silky and smooth head of foam. Raw egg whites don't have any flavour, but give cocktails a richer and creamier texture. I skip the egg whites when I'm making cocktails just for us, but would add it in for my guests if they request it.
