Freedom at last!
My husband, Tomi and I are ecstatic to have our vaccination certificates – it’s our ticket to freedom! Tomi direly needed new clothes while I embarked on a 5000 km journey to find the finest and most fresh produce. Finally, I’m free to select the freshest seafood and veggies! Before the lockdown, who knew doing such simple things like this would bring so much pleasure?
I’ve barely cooked once or twice this whole week! As much as I love cooking and developing recipes, sometimes I need a break. Being away from the kitchen and supporting local cafes and restaurants felt wonderful.
There has been lots of bingeing on seafood on my part. Earlier in the week, we went to our local sailing club and ordered a huge seafood platter. Massive seafood overload. I’ve hit my seafood limit and won’t be eating any for the next month. Okay, who am I kidding? Just three days later, I made these Oysters Kilpatrick 😆
While casually walking around the stores, I stumbled upon these beautiful, large Pacific oysters. I couldn’t resist buying a dozen! Finally, I’m going to post the recipe for our beloved Aussie favourite, Oysters Kilpatrick.
You’ll never guess how simple these oysters are to recreate at home! The Kilpatrick sauce comprises just Worcestershire, ketchup, and Tabasco sauce. This sauce recipe achieves a pleasant mix of sweet, salty, and tangy flavours that don’t overpower the beautiful briny oysters.
To take them to that next level, we can’t skimp on the bacon! We must have a generous amount of crispy bacon to crown the oysters with. I have no shame in saying that I could eat a dozen of these all by myself!

What are Oysters Kilpatrick?
Many Australian restaurants offer the beloved and classic Oyster Kilpatrick as an appetiser. The dish Oysters Kilpartrick was apparently named after an Australian chef who came up with it. The half-shell oysters come with Worcestershire sauce and crispy bacon on top.
What does Oysters Kilpatrick taste like?
Oyster Kilpatrick has a combination of smoky, sweet, savoury, and tangy flavours. You also get the brininess from the oysters.
Are the Oysters in Kilpatrick raw?
In most cases, restaurants don’t serve their Oysters Kilpatrick with the oysters still completely raw. Grilling under high heat ensures that the bacon gets crispy and cooks the oysters as well. I have occasionally had oysters that were either raw or partially cooked, although it is quite rare.
What variety of oysters should I use?
Any kind of fresh raw oysters will do, as long as they’re clean and presented on the half shell. Luckily, that’s how they’re sold here, so we can avoid the daunting task of shucking them.
As for the size of the oysters, look for the bigger ones, like Pacific oysters. I’m talking about oysters that are larger than the average-sized ones, but not those huge jumbo-sized ones that are bigger than our hands! The oysters will shrivel up once they’re cooked, so if you use little ones, you may not see much oysters left in the shells.
Have the oysters the way you love them!
The great thing about cooking for yourself is being able to customise dishes to suit your taste. Although I love raw oysters, I’m not a fan of them in Oysters Kilpatrick, as I prefer mine cooked through. However feel free to cook yours your way by following these easy steps.
For raw Oysters Kilpatrick: Just skip the grilling / broiling of the oyster. Fry the bacon in a frying pan (with some oil if needed) until crispy. Place the sauce over the oysters and top it with the bacon, then serve.
For half done oysters: Grill the oysters for 3 to 5 minutes depending on how big the oysters are.
For cooked oysters – Grill the oysters for 8 to 10 minutes depending on how big the oysters are.

Ingredients for Oysters Kilpatrick
Pacific Oysters – These oysters were originally from Japan and the Pacific coast of Asia, it’s now farmed around the world. Pacific oysters are quite large and meaty, with a mild taste of the sea. If Pacific oysters aren’t available, any large, raw, and super fresh oyster variety will do. Rinse the oysters clean and serve them in their half shell.
Rindless bacon – My favourite bacon is streaky, as I like the ratio of fat to meat. However, all kinds of rindless bacon will work.
Worcestershire sauce has a unique vinegary, sweet and savoury flavour that goes fantastic with meats and seafood.
Tabasco sauce – To add some kick to my Oysters Kilpatrick, I like to add a few drops of Tabasco sauce to the mix, but this is optional and can be omitted.

How to make Oysters Kilpatrick
Step-by-step guide with photos
Preheat the grill / broil element of the oven on high. Place crumpled foil on a baking tray to prevent oysters from tipping. Place the oysters upright onto the foil. Chop the bacon into small pieces.
In a small bowl, mix all the sauce ingredients until combined. Spoon approximately a teaspoon of sauce over each oyster.
Place the bacon over the sauce, gently pressing the bacon into the oyster shell. Grill the oysters for 5 to 8 minutes or until the bacon is crispy and cooked through, then serve immediately.

- 12 large oysters (preferably Pacific oysters) (NOTE 1)
- 200gm / 7oz rindless bacon (diced into small pieces) (NOTE 2)
FOR THE SAUCE
- 1½ tbsp (30ml / 1oz) Worcestershire sauce (NOTE 3)
- 2 tbsp (40ml / 1.4floz) tomato sauce or ketchup
- ⅛ tsp tabasco sauce (optional) (NOTE 4)
- ⅛ tsp salt
- ⅛ tsp freshly ground pepper
Instructions
