A tasty recipe initially created for my baby

This Broccoli Fritters recipe was born when my toddler, Kai, was 8 months old. Desperate to get some veggies into him, I had to be creative with how I hid them in his food. Sadly, at 3 years old, he’s harder to fool. That’s why I’m so happy that this is one recipe he still enjoys.

Of course, as he got older, I had to adjust the recipe. When he was an infant, I tried to avoid adding salt to his food. However, as he got older, his preference for food changed and if I didn’t lightly season his food, he won’t like it.

Seasoning Kai’s food is a bonus for us because we now can’t share his food! I only realise how delicious these Broccoli Fritters were a couple of months ago when I made this for Kai. Whilst waiting for the last batch of fritters to fry, I tried one. How on earth did I think this was baby food? It’s a healthy snack or meal good enough for the entire family!

Broccoli Fritters

These fitters have one head of broccoli and make 6 fritters! So there’s lots of healthy broccoli in each fritter! This is a very easy and quick recipe because there’s no need to cook the broccoli prior. I just trimmed a little off the stem and threw the entire broccoli in a food processor, then mixed it into the batter.

If you don’t have little ones to feed, you could change this recipe and make these fritters even tastier. Add in your favourite dried herbs and spices, or swap mozzarella cheese for a bolder-tasting cheese like parmesan, and of course, season them to your liking. Just minor changes, but it no longer feels like a baby recipe, right?

These Broccoli Fritters are perfect for babies over 8 months old. They’re easy to clasp onto and give babies the confidence to feed themselves.

Are these Broccoli Fritters healthy for a baby?

These fritters contain a good amount of nutritious broccoli in each fritter. It also contains protein from the egg and milk.

For babies under 1-year-old, omit the salt. Kai’s health nurses advised us to avoid adding sugar and salt to his food until he was over 12 months.

Some consider broccoli a superfood and here’s why:

  • Broccoli is highly nutritious because it’s rich in fibre, vitamins and antioxidants.
  • It’s packed with vitamin C and folate.
  • Eating Broccoli can help reduce inflammation. It may also help improve heart, brain, and digestive health.
  • Broccoli is low in calories, sugar, fat, and carbs.

Knowing this makes me want to eat a big bowl of broccoli!

Broccoli – I used a medium-sized head of broccoli. I chopped a little from the end of the stem, then used the entire broccoli by placing them in the food processor.

Plain flour (All-purpose flour) has no leavening (raising agents) such as baking powder mixed in.

Mozzarella Cheese – Any variety of melting cheese would work. Swiss, Monterey Jack, and all cheddars are great choices. For infants, I like using mozzarella as it’s mild in taste and a healthier type of cheese.

Written step-by-step guide with photos

Chop an inch or less from the stem of the broccoli, then roughly chop it into chunks. Blitz the broccoli in a food processor until finely chopped. The consistency of the broccoli should look like breadcrumbs.

In a large bowl, whisk the egg and milk together, then mix in the flour, garlic powder, salt and pepper (if using). The batter will look like a thick sticky paste. Fold in the broccoli and cheese into the batter until it’s well combined.

Heat oil in a frying pan over medium heat. Scoop 3 x 1/4 cup of batter and flatten them with a well-greased spatula. Fry the fritters for 4 to 5 minutes on each side or until they’re golden brown. Don’t flip the fritters until they’re ready or they may break.

Leftovers – Allow the Broccoli Fritters to cool completely at room temperature, then transfer them into a sealed container and store them in the fridge for up to 3 days. When frozen, they’ll keep for 3 months.
