Sizzler’s famous cheese toast

This is one of my favourite cheese toast ever! It doesn’t have 5 kinds of cheeses and it’s missing the popular mouth-watering cheese pull, but who cares! This Sizzler’s inspired cheese toast is straight-up simple, but it’s totally irresistible.

All we need is a loaf of soft white bread, butter, pecorino and parmesan cheese. These few ingredients combined create the tastiest and addictive toast ever! I could seriously eat this Sizzler Cheese toast for breakfast, lunch and dinner.

I have attempted to recreate Sizzler’s famous cheese toasts, but the results didn’t satisfy me. Delicious? Yes, but it didn’t taste exactly like Sizzlers. I experimented with many kinds of cheese and bread but could never get that authentic Sizzler’s taste. Frustrated, I parked it for a later time.

Then this happened! Months ago, I was reading the latest news online when this article’s headline caught my attention. It read something like this:

‘SIZZLERS IS CLOSING SO THEY’VE RELEASED THEIR BELOVED CHEESE TOAST RECIPE’

I don’t think I’ve ever clicked on something so damn fast. This article helped me develop my perfect Sizzler’s cheese toast! I’m so excited to say it tastes just like the real thing, or even better because I used butter and not margarine!

High school party at Sizzlers!

When we were growing up, my parents hardly took us to eat out. Perhaps it had something to do with having to look after the 5 of us! Dad drove a tiny old red Toyota that should only fit 4 people the most, but my parents would pile the 4 of us in the back and my little sister would be on mum’s lap. Back in the early eighties, there were no safety laws and young children could ride in cars with no booster/safety seats. Thank goodness that’s all changed!

When my parents dined out, it would always be Chinese because it was cheap and we all could share a few different varieties of dishes.

So imagine my excitement when in 7th-grade, my school friend had her party at Sizzler! Actually, I didn’t even know what Sizzler was, but I was excited about getting invited.

I remember little of the actual party, but I clearly remembered eating Sizzler’s yummy cheese toast for the first time and how the other girls laughed at my gift. I gifted the birthday girl a giant ceramic elephant because I loved elephants and thought it was a cool present but obviously it wasn’t!

The cheese toast didn’t look like anything fancy. It looked just like an ordinary toast that’s buttered and thrown carelessly on a plate. But oh boy, once I bit into it, I was instantly hooked, and this was where my obsession with Sizzler’s pan-fried cheese toast began.

Sizzler’s secret ingredient

The article stated that Sizzler’s cheese spread had 50% margarine and 50% Pecorino cheese and that’s it! All we needed to do was spread it on and pan fry it.

My first thought was ‘wow that sounds easy’ then ‘what the hell is Pecorino cheese?’

Whatever Pecorino cheese was, I had to find it because I’ve been craving Sizzler’s cheese toasts lately. I went to 4 different supermarkets, but none of them stocked it. Just when I was about to give up and go to a speciality shop, I finally found some in Coles.

Pecorino Romano cheese is Sizzler’s secret ingredient. It’s a hard cheese that smells and tastes similar to parmesan cheese, but it’s saltier and sharper in flavour. It’s also a little expensive as it’s imported from Italy. This little block cost me $12 (US 9).

I followed Sizzler’s recipe but used butter instead of margarine. The smell was so promising when the toast was frying. However, there was something still missing! Determined not to give up this time, I added some powdered parmesan and salt. I also bought a cheap unsliced loaf of white bread so I could slice them thickly myself.

The result was phenomenal. Finally! I felt like that little kid that was tasting a Sizzler’s cheese toast for the very first time! I couldn’t help but break out into my silly happy dance!

Parmesan cheese – Use powdered parmesan cheese, the kind that doesn’t need to be refrigerated. I used Kraft’s parmesan cheese.

Pecorino Romano cheese can be a little hard to find in supermarkets. You may have to pick it up at a specialty shop such as a deli. It’s also quite expensive as it’s imported from Italy. A small block cost me $12 (US 9). It tastes quite similar to parmesan cheese, but it’s made from sheep’s milk and has a sharper and saltier flavour.

Bread – No fancy bread needed, just a loaf of unsliced cheap white, very soft bread.

How to make Sizzler Cheese Toast

Step-by-step guide with photos

Finely grate the pecorino cheese with a Microplane grater. Place the pecorino, parmesan, butter and salt in a microwave bowl and mix with a fork. The butter needs to be very soft or it won’t mix in with the other ingredients. If the butter is still too hard, zap the mixture in the microwave for a few seconds and mix. The mixture should be at a soft and spreadable consistency but not melted.

Slice the loaf of bread with a sharp bread knife into approximately 2cm (0.8in) in thickness. Spread the mixture on each slice, but on one side only. Cover the entire surface of the bread with the mixture.

Heat a non-stick frypan over low to medium heat. Place the buttered side of the bread down onto the pan and leave it untouched for a minute to allow the cheese to melt and stick onto the bread. Cook until the butter and cheese mixture has melted and sticks to the bread with a nice golden layer. It should take between 2 to 3 minutes. There’s no need to toast the other side of the bread, just like the Sizzler Cheese Toast.
