Break your diet for these Cheesy loaded fries

DROPPING SOME KILOS is always on my New Year’s resolutions each year. So before the year ends, why not indulge until the very last day of the year! Yes, I know, I’ve whinged about eating and drinking way too much before and after Christmas, but healthy eating can wait just a little longer.

Great, happy to hear you’ve agreed with me! So let’s get food crazy about these insanely delicious Cheesy loaded fries! Deep-fried crispy steak style chips, topped with a homemade cheese sauce made from processed cheese with loads of fatty, salty bacon and Italian sausages. Yup, not a scale friendly meal, and yes, we are going to end this year polluting our bodies, but it’ll be all worth it.

Don’t despair though, there are some healthy components in this dish. Potatoes, tomatoes, jalapenos and spring onions, so it’s not all completely bad, right?

I had planned to post these loaded chips before New Year’s Eve, but we got thrown a massive curveball and shattered our plans. There’s no celebrating for us this year! The three of us, including my husband and toddler, we’ll be in our room isolating ourselves from the rest of the world. Yes, I know. I still can’t believe our current situation, but more of that later.

Not an ideal way to spend New Year’s Eve, but the situation is out of our hands. Let’s stay positive and hope that 2022 brings us good health, prosperity and happiness. Happy New Year! A result no parents want

I’ll keep this short as I intend to write a full diary/article on our recent experiences soon in a separate post. I’m swimming in a mixture of emotions from guilt, anger, and relief.

My 2-year-old toddler, Kai, woke up with a burning fever on Boxing Day. We thought the worst but hoped for the best, so we gave him Panadol and monitored him closely. He recovered well and his fever went down and he was back to his old self. However, the next morning, he was inconsolable. His fever was back to 38°C (100°F) and he seemed in lots of pain. He refused to walk, eat, and drink.

There was nothing else to do but pack a bag of urgent supplies for Kai and take him to the Emergency Department. Luckily, because of his age and his condition, they allowed us into the children’s ward immediately. Tomasi stayed in the car as only one parent could stay because of COVID restrictions.

They gave him a full check-up, some medication, and put it down to him having Croup again because we had no symptoms. I had a feeling it was something different this time. It wasn’t Croup because the last time he had it, he couldn’t breathe properly and I would’ve recognised that unforgettable sound. ‘Please give him a COVID test’ I asked Kai’s nurse with a shaky voice.

We then had to isolate ourselves in our room whilst waiting for the results because we didn’t want to expose my sister, Nara, if the test came back positive. 2 days later, our world came crashing down. The NSW Government sent me a casual text to tell us that our beautiful little boy, the one that we lived to protect, was positive with COVID.

What’s better than fries?

Deep-fried potatoes are an absolute weakness of mine. Don’t offer me baked or air-fried chips and try to convince me they’re just as good. I fell for that once and purchased an air-fryer only to be severely disappointed!

My chips or fries need to be bathed in oil until it’s golden and crispy! Not good, I know, but come on, they’re called fries for a reason! Though, I do also love crispy baked Salt and Vinegar Smashed Potatoes 

I’m fussy about my hot chips and French fries. I love them hot and crispy as hell and seasoned to perfection. I remembered when I was working in a takeaway store in my younger years and some people would ask for half-cooked chips. What the? Such a strange request!

Vegetables, baked potatoes or fries? Unless I’m on a diet, I would always choose fries. However, if loaded fries were an option, then bring me that, please! I’ll gladly be one of those suckers that pays the extra $10 on top!

The thing I love most about loaded fries is the cheesy sauce. I’m not a fan of overly processed ‘plastic’ cheese, but I love it with loaded fries. My loaded fries could just have this cheese sauce poured over, and I’ll still be in heaven. However, why stop there when we can load it up with whatever we wanted. These loaded fries are quite spicy, but if you don’t like it hot, simply leave the hot sauce and jalapenos out.

Ingredients for cheesy loaded fries with bacon & sausage

Ingredients

Cheese – I used processed burger cheese slices because I like that American yellow cheese look and taste in my cheese sauce. However, any variety of melting cheese would work. Swiss, Monterey Jack, and all cheddars are great choices. It’s best to buy a block of cheese and shred/chop it yourself because store-bought shredded cheese may not melt to a smooth consistency.

Evaporated milk – To make evaporated milk, they remove more than half of the water content from fresh milk. So evaporated milk is unsweetened concentrated milk that’s ultra-creamy in taste and texture. Supermarkets stock evaporated milk in tins near the long-life milk section.

Rindless bacon – My favourite bacon is streaky, as I like the ratio of fat and meat. However, all kinds of rindless bacon will work. If you’re using a lean or shortcut bacon, you may need an extra teaspoon of oil for frying.

Italian sausage – If possible, use raw, good quality Italian sausages because the meat quality and seasoning are much better. I often found these sausages in speciality shops and in delis.

Frozen chips – I used flat ‘steak cut’ chips because I like how I can load each chip up before popping it into my mouth. Frozen wedges, French fries, and regular straight or crinkled chips would all work here. I prefer my chips deep-fried but baked or air-fried chips are also delicious when loaded up!

How to make cheesy loaded fries with bacon & sausage

Step-by-step guide with photos

Grate or roughly chop the cheese into small cubes. Place in the cheese, garlic, cornflour, paprika, onion powder and evaporated milk into a small saucepan. Place the pan over medium heat and stir regularly with a wooden spoon so the cheese doesn’t catch at the bottom of the pan. Once the cheese begins to melt, switch to a whisk, then whisk until the cheese has completely melted and the sauce is smooth. Remove the pan from the heat.

Add the hot sauce into the cheese sauce and stir to combine. Have a taste of the sauce and add salt and pepper if needed. Keep in mind not to add too much salt because the sausages and bacon are salty. Leave the sauce in the pan and set aside. The sauce will slowly thicken and develop a thin film on top. Just stir it occasionally or reheat the sauce to thin it out again.

Preheat oven to 90°C (48°F). Roughly slice the bacon into small strips. Remove the casing from the sausage by running a sharp knife length way into the sausage, then use your fingers to peel the casing from the sausages.

Heat an oven-proof medium-sized frying pan over medium to high heat. Add in the bacon, cook and stir regularly until bacon releases some fat, then add in the sausage meat. Break up the meat into little pieces whilst stirring. Cook until the sausages have slightly browned and fully cooked. Place the frying pan in the oven to keep the meat warm whilst frying the chips.

Fry/bake/air-fry the hot chips, wedges or French fries as per the instructions on the packet until golden and crispy. Place the chips on a large serving plate. Pour half of the cheese sauce over the chips. If it’s too thick, reheat it over medium to thin it out. Place the remaining sauce into a little serving bowl. Spoon on the bacon and sausages on top, then add the tomatoes, jalapeños and spring onions. If desired, pour a little more cheese sauce on top. Serve any remaining meat or salad in separate bowls next to the loaded fries and cheese sauce. Enjoy immediately.

  • 750 gm frozen chips (NOTE 1)
  • Oil for deep-frying
  • 200 gm rindless bacon (sliced thinly into small strips) (NOTE 2)
  • 200 gm Italian sausage (casings removed) (NOTE 3)
  • 1 Tomato (preferably firm, diced)
  • 2 jalapenos (sliced thinly)
  • 2 tbsp thinly sliced spring onions (scallions, green onions) (or coriander/cilantro)

For the cheese sauce
